A holiday staple in my house has always been Lamingtons! They are delicious and rather easy to make. Taste and smells hold memories for me and the chocolate coconut taste with the sponge cake reminds me of my childhood. I would stand at the oven and smell the cakes baking waiting for desert to be ready. I am going to share with you my Moms recipe for Lamingtons. Enjoy!
For the cake:
125 grams of butter
½ teaspoon of vanilla essence
¾ granulated sugar
1 1/3 cups of self-rising flour
¼ cup of milk
For the icing:
3 cups of icing sugar
1 ½ tablespoon of cocoa
1 tablespoon of butter
First, preheat your oven to 180 degrees Celsius.
Combine the butter and vanilla essence in a mixing bowl. Slowly add the sugar and mix until creamy. Add 2 eggs and self-rising flour into the mixture. Then gradually add milk. Mix it 1-2 minutes and then pour into a greased slice tin.
Place your tin into the oven and bake for approximately 15 minutes.
Once baked, remove the cake from the oven and let it cool down. Then remove the cake from the tin and placed it in the cooling rack.
Cut the cake into 2 ½ inch square when completely cooled. Place all the cakes into a freezer bag and place in the freezer.
Now let’s do the icing. In a mixing bowl add the icing sugar, cocoa, and butter. Slowly add a small amount of milk until the mixture is creamy. Then put the bowl of icing over a hot pot of water to maintain creamy consistency.
Remove the square cakes from the freezer and place on a skewer. Using a ladle or spoon pour the icing on top of the squares. Make sure that each square cake is well covered with chocolate. Then dip the chocolate covered squares into desiccated coconut. Shake them and place them on a rack to dry.
Now you have your very own home baked lamingtons!
